The word “Biltong” is derived from 18th century Dutch words – BIL meaning “butt” and TONG meaning “strips”.

South African cuisine is as diverse as its people. Before settlers arrived on the shores of the southern most part of ‘the dark continent’ in the 17th century, indigenous African people had traditional meals unique to each tribe – and the arrival of colonists from Portugal, the Netherlands, Germany, the French Huguenots and of course, the British, added a spectacular array of flavours to the melting pot.

When Dutch settlers arrived in South Africa the hot climate made it important to find a way to store and preserve meat as refrigeration units were still a few years away from being invented. The resourceful “Voortrekkers” quickly learned the skills of the natives combining this with a few tricks of their own.

After coating strips of beef with salt and coriander and hanging out South African meat to dry, it soon became hard on the outside while capturing rich flavours on the inside. They soon discovered that not only would the meat last for months, it also created a whole new eating sensation with intensified flavour and texture.

Since then, Biltong has evolved into a traditional South African delicacy, loved by locals and travelers alike and its delicious ‘more-ish’ taste has captivated attention around the globe.
